(12 oz) can thawed coconut milk
2C water mixed with 1/3C cornstarch
1/3C sugar
Combine all
ingredients into a medium sized saucepan. Cook, over medium
heat, use a wire whip to stir mixture as it cooks. Cook until
thickened, about 10 minutes.

Be
careful not to scorch pudding as it thickens. Pour into shallow
baking pan and cool. Cut into squares. Best served cold.
